Fish cake recipe

A few people asked me for the salmon fish cake recipe.
So here it is.

Ingredients
1 salmon filet about 6-8 oz in weight - boneless and a skinless poached and then flaked in a bowl.
Mashed potatoes mashed with butter,about 12 oz
1/2 chopped onion softened in bit of oil until golden brown.
4 anchovies ( optional)
Salt and pepper.
Fresh chopped parsley 1 tablespoon
Fresh brown bread crumbs,

Egg with bit of milk to make breadcrumbs stick.


Mix all ingredients except bread crumbs until binded together.it will be a bit stodgy so add some bread crumbs till it's a like a doughy consistency.
You need to be able to mould it into rounds and pat down to a fish cake shape disc of about an in thick.

This makes 4 good sized cakes

Then dip into egg wash and then breadcrumbs making sure to cover all the cake. Then can cook in a oven on gas mark 5 making sure to grease tin as may stick. Can fry too but I'm trying to be healthy!
You can freeze too if you wrap in some cling film first.
